Yogurt (whipped)                              2 cups

Gram flour                                         1 ½ + ¼ cup

Onion (finely sliced)                         ½ cup

Garlic paste                                      1 ½ tbsp                  

Curry leaves                                      6

Red chili powder                             1 tsp

Turmeric powder                             ½ tsp

Cinnamon                                        1 inch piece 

Peppercorns                                     6       

Cloves                                              4

Black cardamom                             1

Dried fenugreek leaves                 2 tbsp   

Green chilies                                   10

Onion (chopped)                           ½ cup

Coriander leaves (chopped)          1 cup   

Potatoes (chopped)                       ½ cup

 Crushed coriander seeds              1 ½ tbsp    

Cumin seeds                                  ½ tsp

Salt                                                 to taste

Oil                                                  as required

Method Curry Pakorey Recipes

Whip yogurt and water together and then dissolve ¼ cup gram flour in the yogurt Add 1/2 tsp red chilies, 1/4 tsp turmeric powder cinnamon peppercorns black cardamom and curry leaves and cook while stirring. After it comes to a boil cook for 15 minutes and turn off the flame Add 1/2 cup coriander leaves 4 whole green chilies and dried fenugreek leaves cover with a lid

Heat oil in a frying pan adds white cumin seeds when it gives out fragrance add 1/4 tsp turmeric powder and then pour in curry. To make payolas make a thick mixture of 1½ cups gram flour ½ tsp red chilies salt onion, potatoes, 6 chopped green chilies coriander seeds ½ cup coriander leaves and 1/2 cup water. Fry small amounts of mixture in the heated oil and when golden

Brown add in the curry Delicious Curry Pekoe is ready
