Ingredients Special Biryani

Rice 1/2 kg
Chicken 750 gram
Potatoes & tomatoes 3 each
Dried plums 1 cup
Onions (finely sliced) 2
Yogurt 1 cup
White cumin seeds 1 tsp
Black cumin seeds 1/2 tsp
Crushed red chillies 1 ½ tbsp
Hot spices (whole) 1 tbsp
Hot spices powder 1 tsp
Ginger/garlic paste 3 tbsp
Desiccated coconut 4 tsp
Saffron a little
Yellow food colour
(dissolved) few drops
Coriander leaves 1/2 bunch 1/2 bunch
Mint leaves 1/2 bunch
Green chillies 5
Clarified butter 1/2 cup
Oil 1 cup
Salt to taste

Method Special Biryani

Boil water in a pot; add salt and white cumin seeds. • When it gives out fragrance, add rice and par-boil, then
drain it. Heat oil in a pot and add whole hot spices. • When they begin to pop, add onions and fry till golden.
Add chicken and ginger garlic paste to the p0t and fry.
Now add yogurt, green chillies, potatoes, crushed red chillies, hot spices powder, salt and black cumin seeds
When chicken becomes tender, add 2 tsp coconut, dried plums and tomatoes. Cook on low flame for 5 minutes and take off flame.

Make a layer of half the 'qorma' in a pot, top with a layer of half the rice and another layer of the remaining 'qorma'. Sprinkle coriander leaves,
mint leaves and 2 tsp coconut over the 'qorma' and then place a layer of the remaining rice. Sprinkle saffron and food colouring over rice.
Heat clarified butter and pour it over rice; keep on dum. Dish out, decorate with lemon pieces and serve.
