Large bread                      

(cut lengthwise)                              1

Butter                                             200 grams   

Salt                                                 3/4 tsp

Black pepper powder                    1/2 tsp


(Boiled and mashed)                     2

 Tomato ketchup                          1/2 cup

Mayonnaise                                 1/2 cup  + 1 Tsp

Red food colour                           2 drops

Yellow food colour                      2 drops

Ground coconut                          1/2 cup

 Fresh coriander                          1/2 cup

Mint                                             12 leaves

Yogurt                                         6

Garlic                                          1 clove

Green food colour                      2 drops

Mustard paste                            1/4 tsp

Salad leaves                           

(finely sliced)                             for garnishing

Carrots (finely sliced)               for garnishing

Method Pin Wheel Sandwiches

. Cut edges of bread slices and thin them with a rolling pin. Mix red food colour in tomato ketchup.  Mix yellow food colour, 1/4 tsp black pepper powder, 1/4 tsp salt and 1 tsp mayonnaise into eggs with a fork. Blend coconut, fresh coriander, mint, green chillies,/4 tsp salt, yogurt, garlic and green food colour to make green chutney.

 With an electric beater mix 1/4 tsp salt, 1/4 tsp black pepper powder and mustard paste in the butter. Take 1 slice of bread and apply butter mixture, mayonnaise and green chutney. Roll.

On second slice of bread apply butter mixture and egg mixture. Roll. Layer third slice of bread with butter and tomato ketchup. Moisten a piece of muslin cloth, squeeze out excess water and tightly wrap sandwiches in it. Freeze for 1 hour. Take sandwiches out of the freezer and cut round slices. Place in dish and garnish with salad leaves and carrots.
